I have found that prepping a few dinners on Sunday to have ready to pop in the oven on the days that I work has been a huge time-saver and has taken the stress out of getting dinner ready. One of my favorite make ahead meals in Chicken and Rice casserole. I mix everything together, put it in the pan and then all I have to do is throw the pan in the oven when I walk in the door. Best of all this dinner makes enough for 2 whole meals! My 3-year-old and 11-month- old both love it and I often find my hubby going back for seconds and thirds!
Chicken and Rice Casserole
Ingredients:
1 lb boneless skinless chicken breast (cooked and cubed)
2 cups of white or brown Minute® Rice
1 can chicken broth
1 can cream of chicken or cream of mushroom soup
1 package shredded cheddar cheese
salt, pepper and minced onion to taste
Preheat oven 350 degrees. to Combine cooked chicken, rice, chicken broth, cream of soup, pepper, salt, minced onion and half the package of cheese in a big mixing bowl. Mix well and transfer to a greased 9x13 baking dished. Cover with foil and bake for 45 minutes. Take out and cover with the rest of the shredded cheese bake uncovered for additional 15 minutes.

ReplyDeleteYou do not cook the rice. It cooks really well with all the liquid in the oven. Just make sure to cover it with foil while it cooks.
